Chicken Salad in Curry Mayonnaise

This simple dish can be served as a summer salad or used as a Taco filling or Pitta filling or Sandwich filling. You can make it with turkey too. Serve 4


  • For Chicken Salad:

  • 2 pre-cooked chicken breasts, skin and bones removed and chopped into cubes or shredded

  • 1 tbsp. bought or home made Curry Powder

  • 1/2 cup bought or home made Mayonnaise

  • 2 tbs. bought or home made Sweet Mango Chutney*. In mango season, you can use 1 cup fresh mangoes, peeled and chopped

  • 1 heaped tbsp. raisins (optional)

  • 1/2 red onion, peeled and chopped finely (optional)

  • 1 green chilli, chopped (optional)

  • 1 tbsp. chopped coriander leaves (optional)

  • Salt to taste

  • Coarsely ground pepper to taste

  • *For a minty flavour, try Green Mango Chutney


  1. Mix mayonnaise and curry powder well, until smooth.

  2. Add mango chutney and mix. If using fresh mangoes, add them with chicken.

  3. Place chicken and all other salad ingredients in a bowl.

  4. Pour dressing and mix gently, but thoroughly.

  5. Taste and adjust seasoning, as required.

  6. Keep in the fridge for a couple of hours.

  7. Serve chilled.
