Carrot And Apple Salad

When other green salad vegetables are not in season, this is an easy and tasty salad to make. It will last in the fridge for a couple of days but it is best eaten freshly made.

Ingredients

  • 1 fresh and crisp apple of choice, cited and grated

  • 2 medium carrots, peeled and grated

  • 1 green chilli, chopped finely (optional). If you don not have one, add chilli flakes. Adjust amount to.

  • 1 tsp. salt, adjust to taste

  • Juice of 1 lime/lemon or 2 tbsp. good quality Balsamic vinegar, 1 or 2 tsp. Good quality olive oil

  • 1 tsp roast cumin seeds, coarsely ground

  • Optional: 1 small red onion, finely chopped. It adds to the taste.

Instructions

  1. Squeeze as much juice out of the grated carrots and apple as you can. Otherwise your salad will get soggy. This juice is pretty tasty to drink.

  2. Place carrots, apple, chilli-green or flaked, onion if used, salt, cumin seeds half the green chillies, salt and pepper in a bowl. Last picture shows it made with red onion.

  3. Squeeze lemon juice on top. Add vinegar and olive oil. Mix well.

  4. Cover with a cling film and chill in a fridge.
