Garlic Pickle

Garlic pickle is a tasty and easy pickle to make. I sometimes use single clove garlic or Elephant garlic to make this pickle, simply slicing each garlic into ‘clove’ sizes. Makes standard pickle jar.

The recipe here can be used to pickle many different vegetables.

Ingredients

  • All amounts are approximates

  • 1 1/2 cups garlic cloves, peeled

  • 1/2 cup mustard oil

  • 1 tbsp. Panch-Pooran

  • 1 1/2 to 2 tsp. salt

  • 1 tsp. turmeric powder

  • 1 tsp. chilli powder

  • 1/4 cup malt vinegar

Instructions

  1. Heat oil in a pan. Allow to smoke and then take off the heat, until it stops smoking but is still hot.

  2. Add Panch Pooran mix. When the seeds crackle, add turmeric, salt and chilli powder. Stir for half a minute and add garlic cloves.

  3. Stir to mix and turn heat off.

  4. Add vinegar. When cool enough, put in a sterilized jar, close the lid and leave on a window sill or in the sun for 3-4 days.

  5. Enjoy!
