Garlic Pickle

Garlic pickle is a tasty but easy pickle to make. The recipe I have used here can be used to pickle many different vegetables. All amounts are approximates. I sometimes use single clove garlic or Elephant garlic to make this pickle, simply slicing each garlic into ‘clove’ sizes. Makes standard pickle jar.
Ingredients
1 1/2 cups garlic cloves, peeled
1/2 cup mustard oil
1 tbsp. Panch-Pooran
1 1/2 to 2 tsp. salt
1 tsp. turmeric powder
1 tsp. chilli powder
1/4 cup malt vinegar
Instructions
Heat oil in a pan. Allow to smoke and then take off the heat, until it stops smoking.
Add panch-pooran mix. When the seeds crackle, add turmeric, salt and chilli powder. Stir for half a minute and add garlic cloves.
Stir to mix and turn heat off.
Add vinegar. When cool enough, put in a sterilized jar, close the lid and leave on a window sill or in the sun for 3-4 days.
