Baked Sweet-Potato Slices

This is a simple yet delicious way of cooking sweet potatoes and it is definitely worth a try. Sweet potatoes are good for diabetics (medium glycaemic index), they are rich in vitamins like A and C and minerals and have antioxidant properties.

Serves 4

Ingredients

  • 2 medium sweet potatoes

  • A little oil or butter for brushing (use oil for vegan)

  • Ground cinnamon/dalchini

Instructions

  1. Wash, top and tail sweet potatoes. Scrub them clean.

  2. Slice lengthways into 4 slices each or an inch (2.5cm.) thick discs. I prefer to leave the skin on, it is quite tasty!

  3. Place on a baking tray/sheet and brush with oil or butter. Sprinkle with cinnamon, if using.

  4. To oven cook; Bake at 375-400F or 190-200C until they feel soft to touch and their surface is beginning to get brown blisters. You may need to turn them over once or twice. This takes about 30-40 minutes.

  5. To BBQ; Wash and slice sweet potatoes. Parboil (partially boil) for a few minutes and drain. Smear with a thin film of oil or butter. Place on a tray and leave on the shelf underneath the charcoal tray until done. The heat from the coal will cook them slowly. You can also place them on a rack well above the charcoal. Cooking directly on the coal does not allow them to become crisp.

  6. Serve hot.

Notes

  • You can make sweet potato chips or fingers, by cutting them accordingly and then baking. Reduce time of cooking.

  • Some people smear them with a little honey too, along with oil, but I find that they are usually sweet enough as they are.
