Chicken, Grape and Walnut Salad with Mayonnaise Dressing

This simple dish can be served as a summer salad or used as a Taco filling or Pitta filling or Sandwich filling. Serve 4

Ingredients

  • For Chicken Salad:

  • 2 pre-cooked chicken breasts

  • 100 gm. seedless grapes, halved

  • 50 gm. walnuts

  • 1 green chilli chopped (optional)

  • 1/2 red pepper, finely chopped (optional)

  • For Dressing:

  • 1/2 cup good quality mayonnaise or make your own; Mayonnaise

  • 1 tbsp. balsamic vinegar of good quality

  • 1/2 red onion, peeled and chopped finely

  • Salt to taste

  • Coarsely ground pepper to taste

Instructions

  1. Remove skin and bones and chop flesh into cubes or shred

  2. Peel and chop inion finely.

  3. Halve grapes.

  4. Wrap walnuts in a kitchen towel and bash gently with a rolling pin to break into small pieces. Do not powder them.

  5. Place all dressing ingredients in a bowl, mix and adjust seasoning.

  6. Add chicken, walnuts, grapes and any other optional ingredients you are using.

  7. Mix gently, but thoroughly.

  8. Taste and adjust seasoning again.

  9. Keep in the fridge for a couple of hours.

  10. Serve chilled.
