Mixed Salad 1 With Fruits, Flowers And Edible Leaves

A fresh mixed salad makes a summer lunch special, as far as I am concerned. The type and amount of ingredients depends upon what you have available. Many plants and flowers in your garden are edible, make use of these. Add a little fruit from your fruit basket. I am just giving suggestions here, you can use almost any fruit/salad vegetable that can be eaten raw, in whatever proportion you want. You can eat it with or without a dressing. I tend to serve the Salad Dressing of choice on the side. You can just spice it up with salt and coarsely ground chillies/black pepper with lemon juice or with Chat Masala and lemon juice.

Below are listed some of the ingredients, just to give an idea. You can mix and match whatever you like. Edited August 2013

Ingredients

  • Asparagus (steamed)

  • Artichoke hearts

  • Avocado Pear

  • Beetroot, cooked and chopped/sliced/grated. Add just before serving to avoid colour seeping into other things. Or serve it on the side.

  • Carrots, chopped, sliced or grated

  • Celery, chopped, sliced or as mall sticks

  • Cucumber, peeled and chopped/sliced/shredded

  • Green chilli, finely chopped (only if you like hot food

  • Flowers (petals part only); nasturtium, cucumber, pumpkin, courgette, chives, garlic, chicory, lavender, rose petals, rocket, radish, wild garlic etc

  • Fruits: Apple, Blackberries, Blueberries, Strawberries, raspberries, Cape gooseberries (Ras-bhari in India), Guavas, Kiwi fruit, Melon cubes or balls, Orange segments-seeds and membranes removed, Pear, Pineapple, Pomegranate, Watermelon

  • Leaves; different types of leaves in many colours e.g; Beet, Baby spinach

  • Basil, Coriander, Cress, Dill, Lettuce leaves in many colours and varieties, Mint, Nasturtium, Parsley

  • Small radish leaves, Tender cabbage leave

  • Watercress, wild garlic. You can have any leaves in salad that can be eaten raw.

  • Mange tout (eat everything) or snow peas or sugar peas, are flat-pods of peas

  • Mushrooms, thinly sliced or whole button

  • Olives, chopped or whole

  • Onion: red onion, white onion, spring onion, or any other onion, in small amounts, finely chopped or sliced

  • Peas; tender, fresh green peas

  • Peppers/Capsicum-red, green, black etc.

  • Radish; white mooli radish or little radishes-red/white/pink/black

  • Seeds; any edible seeds like Melon, Sunflower, Sesame Seeds.

  • Tomatoes, any type, cut as required and deseeded

  • Tomatoes, cherry tomato halved, other sliced and deseeded

Instructions

  1. Clean, wash, chop, prepare the ingredients you want to use, to the size and shape you want. Place all salad ingredients in a bowl and mix gently.

  2. Serve with a dressing of choice.
