Iced Tea

Iced Tea

All measures are approximate, so don’t worry about UK, USA or other cups. I would keep mine in the fridge for no more than 2 days. Fresh is best. Strenghth of tea is to your taste, make it as strong or as weak as you like. Makes roughly 1 1/2 litre.

Ingredients

  • Basic Tea:

  • 1 tea bag (more if you like it strong) of choice. You can use tea leaves of your choice.

  • 500 ml (1 pint) boiling water

  • 500 ml (1 pint) cold water

  • Fine sugar or honey or a sweetener to taste

  • Lemon juice to taste-juice of 1 1/2 lemons approximately

  • A few mint leaves, washed (optional)

  • Slices of lemon to serve

  • Ice cubes to serve

Instructions

  1. Add 1 tea bag to 500 ml./1 pint of boiling water in a jug or tea pot.

  2. Cover and allow to stand/brew for 5 minutes to a couple of hours.

  3. Remove tea bags.

  4. Measure 500 ml. of cold water in a large jug.

  5. Squeeze in lemon juice.

  6. Add brewed tea and sugar/honey/sweetener to taste and stir in. Stir.

  7. Serve over ice cubes in chilled, tall glasses, with a lemon slice in the tea, not on the side of the glass.

  8. You can dip the rim of your glasses in water and then in fine sugar, to make it look more professional.

  9. Variations from Mamta:

  10. Apple and Cinnamon Tea: Add 1 level tsp. cinnamon powder or 1 small stick of cinnamon to water and then boil it. Add 4 cups of unsweetened apple juice instead of cold water at step 5. Reduce sugar according to taste.

  11. Ginger Ice Tea: Add 1 tsp. grated ginger to boiling water and then strain over tea bags. Proceed as normal.

  12. Apple Tea: Replace 500 ml/1 pint of cold water with apple juice. Reduce sugar according to taste.

  13. Fruit tea: Add a cup of orange juice to tea once cool. Add a couple of spoons of crushed/very finely chopped fruit to each glass. Pour tea over it. Reduce sugar according to taste.

  14. Mint Tea: Add a bunch of crushed, broken up mint leaves when boiling water. Then add tea bags and let it brew. Serve using a strainer to remove boiled leaves. Add a couple of fresh mint leaves in each glass for garnish.

  15. Pineapple tea: Replace 500 ml water with pineapple juice. Reduce sugar according to taste. You can add a little finely chopped pineapple when serving.
