Spinach and Pear Salad

This salad recipe comes from a chef at the Lunga River Lodge in the Kafue National Park in the wilds of Zambia. It is quite refreshing and crunchy. Mamta. Serves 2

Ingredients

  • A large bunch or full cup of young spinach leaves

  • 1 pear, peeled and diced into bite size pieces

  • 1-2 spring onions, cleaned and chopped

  • 1 tbsp. pieces of ham or cooked bacon (optional)

  • Dressing:

  • 2 tsp. fresh lemon or lime juice

  • 1/4 tsp. chopped tarragon

  • 1 tsp. sugar or equivalent sweetener or honey

  • 1 tsp. wholegrain mustard

  • 2-3 tsp. virgin olive oil

  • Optional

  • A handful of thinly sliced red onion rings

  • A handful of Pomegranate seeds/pearls

Instructions

  1. To make the dressing, place all ingredients in a screw top jar and shake vigorously. Keep aside.

  2. Just before serving, place all other ingredients in a bowl, mix and pour dressing over. Mix gently. Serve immediately.
