Chicken Grilled in Garlic Marinade

Lamb and Other meats can also be marinated this way.

Ingredients

  • 6 Chicken breasts approximately 1 1/2 kg. (other chicken pieces can also be used),

  • Cloves off a whole bulb of garlic, peeled and squeezed through a garlic press

  • 2 tsp. salt

  • 1 tbsp. sherry

  • 2-3 tbsp. light Soya sauce

  • A good sprinkle of freshly ground black pepper

  • 1 tsp. sugar or honey

  • 2 tsp. sweet chilli sauce (Lingham’s is good)

  • 2 tbsp. oil

Instructions

  1. Remove bones off the chicken and open the breasts out. Or, buy boneless chicken breasts

  2. Place chicken pieces in a bowl and add all ingredients. Mix well. Leave to marinate for 30-60 minutes.

  3. Cook under a pre-heated grill, turning and basting with oil a couple of times, until chicken is cooked through. If you don’t have a grill, heat 2 tbsp. oil in a wok and fry 2-3 pieces of chicken at a time, not the entire lot, until it is cooked through. It can also be cooked on a BBQ. Chicken must be cooked thoroughly, but not over-cooked.

  4. Serve hot, with rice or jacket potatoes and salad.

Notes

  • You can use this marinade with pork chops or lamb chops too.
