Chilli Sauce 5, Patricks

I find this sauce excellent with all foods, including fresh fruits like pineapple & strawberries, as a 'Dipping sauce'.


  • 10 or more fresh chilli's

  • 1 cup palm sugar (you can use ordinary sugar, but the taste is not as good)

  • 3/4/cup water

  • 1/4 cup vinegar

  • 2 tubes tomato puree

  • 2 inch piece of fresh ginger, peeled

  • 6 or more cloves garlic, peeled

  • 2 chopped lime leaves

  • 1 handful chopped fresh coriander leaves

  • 1 tbsp. fish sauce (if strict vegetarian, add 1 tsp. salt instead)


  1. Place all ingredients in a pan.

  2. Bring to boil and then simmer for 25 minutes.

  3. Allow to cool and then blitz with a hand blender or in a liquidiser. You should have the same pouring quality as ketchup.

  4. Fill in sterilized bottles.
