Kulfi Indian Ice-cream - 5, with Fruits

Most seasonal Indian fruits will be suitable for this dish. You can use one fruit or a selection of mixed fruits. Tinned fruit pulp can also be used but you must adjust the sugar accordingly. Use unsweetened condensed milk and adjust the sugar at the end, according to your taste. Quantity of fruit and condensed milk is an approximate guide only. A little more or a little less will not make much difference.

Ingredients

  • 450 gm. fruit pulp, fresh or tinned.

  • 400-450 gm. tin of unsweetened condensed milk

  • 1 small carton of double or whipping cream (fresh double cream is better)

  • Sugar to taste

Instructions

  1. If using fresh fruit, peel, remove stones and chop roughly.

  2. Put all the fruit with 2 tbsp. of water, bring to boil and turn heat off. Allow to cool. Drain any remaining water. Alternatively, you can microwave the fruit on high, for 3 minutes. If using tinned fruit, drain juice off.

  3. Liquidize fruit into pulp.

  4. Add condensed milk and cream into the liquidizer and blend for a couple of minutes.

  5. Add sugar, if necessary and blend again.

  6. Freeze in ice-cream tubs.

Notes

  • Take out of the freezer for 5-10 minutes before serving. This will make the ice-cream softer. Alternatively, it can be softened in a microwave for 2-3 minutes on defrost.

  • For a sugar free version, use fresh fruit only and use sweetener instead of sugar.
