Chinese Clear Vegetable Soup

This is one of the simplest vegetarian soup you can make in minutes. It is very tasty and quite satisfying. You can use any vegetables you like, make it only with spinach/lettuce and tomatoes even. Keep it simple, not too many vegetables. You can add a handful prawns or cooked, shredded chicken to it at the end. Remember not to overcook prawns.

Serves 4

Ingredients

  • 1 small onion, peeled and sliced

  • 1 carrot, peeled and sliced

  • 1 cup of mushrooms, sliced

  • A handful of spinach/lettuce leaves, roughly torn or chopped

  • 1-2 tomatoes, chopped roughly

  • 1 tbsp. oil

  • 2 teaspoons soya sauce (adjust after tasting)

  • 1 Stock pot or a couple of tbsp. stock granules (or use light Soya sauce and Chinese 5 spice powder)

  • 4 cups water

  • Garnish

  • 1-2 thinly sliced spring onions (optional)

Instructions

  1. Prepare vegetables.

  2. Heat the oil in a pan. Add onions, carrots, mushrooms (or whatever other vegetables you are using) and soften for 3-5 minutes.

  3. Add boiling water, stock cube/granules, Soya sauce and cook for a few minutes. Vegetables should not become soggy.

  4. Add spinach/lettuce leaves.

  5. Turn heat off and adjust seasoning.

  6. Serve hot. You can have a garnish of spring onions.
