Dainty cucumber sandwiches are a must for an English tea party. Each sandwich is thin and small, just a mouthful or two. For best results, get the baker to slice the bread thinly or buy a pre-sliced white bread, unless you have a very steady hand can do it yourself. A day old bread is easier to slice than a fresh one .

Ingredients

  • White bread, thinly sliced

  • 1 fresh cucumber

  • Unsalted butter at room temperature (soft)

  • Freshly ground black pepper

Instructions

  1. Peel and thinly slice cucumber. Pat dry on a kitchen towel.

  2. Spread bread slices thinly with butter, evenly and thinly. I follow my Grandmother's instructions to spread the bread with butter and then with a reverse swipe of the knife to take off as much as possible!

  3. Spread cucumber slices evenly over the bread in two layers.

  4. Sprinkle with black pepper, NO SALT.

  5. Cover with another slice of buttered bread.

  6. Slice off crust with a sharp knife.

  7. Cut into finger shapes or little triangles or squares.

  8. For variations, you can use following in place of butter; cream cheese or a mix of mayonnaise or cream cheese or simply add a few leaves of mint on top of cucumber.
