Fat Free Carrot, Ginger and Coriander Soup

This is one of many fat free soups that I often make for lunch. It is easy, tasty and nutritious. Quantities of vegetables are approximate only. It can be made a day in advance and re-heated before serving.

Serves 6

Ingredients

  • 450 gm. carrots, peeled and roughly chopped

  • 1 medium onion, sliced and roughly chopped

  • 1 small piece of ginger, peeled

  • 1 tsp. ground coriander seeds

  • 1 1/2 litre water

  • 2 level tbsp. vegetable stock granules. If you don’t have them, just add salt and pepper

  • 2 tbsp. cleaned coriander leaves

Instructions

  1. Place everything except coriander leaves in a pressure cooker and cook under full pressure for 2-3 minutes

  2. Cool, open pressure cooker.

  3. Add coriander leaves and half the stock granules. Blend until smooth.

  4. Taste and add more stock granules (or salt and pepper) as needed.

  5. Reheat to just before boiling and serve.

  6. You can add a little cream before serving, but it won’t be fat free any more!
