Salmon Salad

This is an easy salad to prepare, very popular in our house, specially for a BBQ that has been thrown together in a hurry. I use it as a as a salad or as a filling/topping for any of these; jacket potato, pitta bread pocket, tacofilling, sandwich, tomato halves, on top of crisp lettuce leaves. Serves 4

Ingredients

  • 1 tin of salmon fish or 1 cooked tuna steak. The picture here shows salmon pan fried with Hoisin sauce marinade, which was leftover from an earlier meal

  • 1 small red onion, peeled chopped finely

  • A good sprinkling of coarsely ground black pepper

  • 1/2 cup of a good quality Mayonnaise

  • 2 tbsp. tomato ketchup or tomato salsa

  • Juice of 1/2 lime/lemon

  • Optional

  • 1 green chilli, finely chopped/chilli sauce of choice

Instructions

  1. Drain and flake salmon roughly.

  2. Place all ingredients in a bowl and mix gently with a fork.

  3. Cover with a cling film and chill.

  4. Serve as in introduction.
