Tortilla Sandwich with Hot Cheese Filling

This is an easy and quick snack/meal to make from tortillas or leftover Chapatties. You can buy ready made tortillas and chapatties. The quantities given are for one Quesadilla.

Here I have shown the most basic one. Experiment with different fillings, thinly sliced tomatoes, finely chopped green chillies, other thinly sliced vegetables, Scrambled Eggs, leftover roast chicken and meat chopped and spiced up. Increase the amount of filling to make it more substantial. Just cook on low heat, because tortillas are already cooked and burn very quickly, if you are not careful..

Ingredients

  • 2 Tortillas or chapatties

  • 1-1 1/2 heaped tbsp. of grated or crumbled cheese of your choice. Mature cheddar, Stilton, a mix of mozzarella and cheddar, St. Augur or any other type of cheese you have lying around in the fridge.

  • 1/2 small green chilli, thinly sliced (adjust to taste). You can use chilli flakes.

  • 1/2 tbsp. chopped onions, I prefer red ones.

  • 1 tsp. coriander leaves chopped.

  • Optional: Other thinly sliced vegetables/meats of choice.

Instructions

  1. Heat a frying pan to medium, not too hot. Slow cooking will allow the cheese inside to melt and onions to cook slightly.

  2. Lightly oil a tortilla/chapatti and place it on the pan oiled side down.

  3. Evenly spread your toppings and then cheese on top.

  4. Cover with the other chapatti.

  5. Oil the top surface of the 2nd chapatti lightly. Cook pressing gently with a flat spatula, until cheese begins to melt and two tortillas stick together.

  6. Turn over once or twice gently, so that the cheese doesn't spill out. A wide spatula is best for this.

  7. Serve immediately. You can cut it into wedges using a sharp knife or a Pizza slicer. Wedges are good for a buffet or as appetizers.

  8. You can experiment with other fillings.
