Cucumber, Onion &Tomato Raita & Varitions (Yoghurt)

This is another popular raita often served in Indian restaurants in Uk, perhaps because it is so easy to make. Proportions of all vegetables are approximate.

Ingredients

  • 2 cups, thick natural yoghurt (or Sour cream for)

  • 1 small red onion, finely chopped/sliced

  • 1 medium tomato-seeds removed and finely chopped

  • 1/2 cup cucumber (kheera or kakri) finely chopped

  • 1-2 green chillies, finely chopped (optional, but they are nice)

  • 1 tbsp. chopped coriander leaves and/or chopped mint leaves

  • Salt to taste

  • 1/2 tsp. coarsely ground roast cumin seeds (or freshly ground black pepper)

  • 1/4 tsp. coarsely ground roast cumin seeds for garnish

  • 1 carrot, peeled and finely cubed (optional)

  • Optional garnish; 1/2 red chilli, chopped or a sprig of mint leaves

Instructions

  1. To make, mix all ingredients together in a large bowl and transfer to a serving bowl.

  2. Garnish with a sprinkle of roast cumin and chopped red chilli and mint/coriander leaves.

  3. Serve chilled.
