Hi, I am looking for ingrediants for a Korma reciepe but cannot find Cassia bark in my local shops, can I use Cinnamon sticks as a substitute?

Thanks for asking about this, I've just found out something new..

Cassis is often sold as cinnamon and more often than not its what you would be getting when you thought you'd bought cinnamon !! (they are both very similar and of the same plant genus)

True Cinnamon is a lighter colour and milder in flavour than Cassis (which tends to be darker and often rougher looking when sold in stick form)..

.. This would explain why sometimes I get powedered cinnamon its very light in colour and other times its almost as dark as powdered clove... it also explains why sometimes I need to really heap it in to get the same flavour levels as previously it only took a little....
