What is the name of the mix of fresh onion, garlic and ginger root (and sometimes chilli) added to oil/ghee at the beginning of some curries. It's a short word, something like tadka. Thanks Mamta

Hello Helen

I don't know if there is a word for it. Tadka or Tarka means tempering of food with flavours by adding various seeds (cumin/mustard/fenugreek/fennel/carom etc.) in hot oil and adding to foods, to give them flavour.

Sometimes the word Tarka is used in relation to spicing up a conversation too.
