To answer a question:-

*sometimes sugar and water : 1/4 cup sugar to 3 tablespoons water brought to a boil & simmered for a dark golden colour, is used to make dark & light layers.

*Melted sugar used in the batter is probably done when the sugar is coarse- best sugar is caster/granulated which eliminates this process.

*The heat for the oven broiling/baking is 180C / 350F top shelf, with 10 - 12 minutes for each layer (for a 9 egg yolk, 600ml coconut milk , 150gm AP flour Bebinca)

Definitely going to try the " pancake method" - thanks for the tips ladies
